Adding a Stout such as Guinness to a cake adds intense moisture & offsets the sweetness with a touch of bitterness.

You will need:

  • 250ml Guinness
  • 250gms butter (unsalted)
  • 75gms cocoa powder
  • 400gms caster sugar
  • 150ml sour cream
  • 2 large eggs
  • 1 Tbs vanilla extract
  • 275gms plain flour 
  • 2.5 tsps baking soda 

For the icing:

  • 300gms of cream cheese
  • 150gms of icing sugar
  • 2 tsps of cornflour
  • 125mls of cream

To make:

  1. Preheat the oven to 180°C and butter & line a 23cm cake tin
  2. In a saucepan, add the Guinness & butter & heat gently until the butter is melted. Whisk in the sugar & cocoa & remove from the heat. 
  3. In a seperate bowl, beat the sour cream, eggs & vanilla. Add the Guinness/butter mix + flour & baking soda & stir until combined. 
  4. Pour the batter into the greased & lined tin & bake for 45-60mins. Leave to cool completely in the tin. 
  5. Beat the cream cheese, icing sugar, cornflour & cream until you have a spreadable consistency. 
  6. Ice to resemble the froth on top of a pint.
